Kutti..

..another Sindhi Style food..

I tried for the first time on last year Ganesh Chaturthi..

Pretty simple to make..It is kinda ladoo made of roti (Indian Bread)

Ingredients:

Roti (Indian bread)  – 4 nos (Recipe for roti is out here)

Sugar – 1 cup (Depends on how sweet you want..

Butter – 2 tsp

Method:-

-Crush the rotis in to small pieces (Its not necessary the roti needs to be soft for making kutti..Even its better if it is little hard..

- In a blender, add the small roti pieces and sugar and let it run for 30seconds.. (We dont want fine powder..It shd be with little  crumbles..

- Add..butter in the mixer..and make small ladoos (balls) out of it..

Thats it.As I mentioned  earlier…Its quite simple….

ChocoNana Cake (Chocolate Banana Cake)

I started enjoying baking these days..Tried quite a few varieties of cakes. cookies and cupcakes…

Initially my cookie was over cooked and the color was black..cake wasnt cooked well..but it took its own time..

Tried chocolate Banana cake twice last week…once I tried for family..one of my friends loved it ..and she wanted me to make for her family who is visiting her…

I took the recipe from JOY OF BAKING..

Its Tried and tasted..;)

Pomfret Fry

Fish and Rice is always my favourite food..

Ingredients:

Silver Pomfret : 2
Chilly Powder  : 1 teaspoon
Turmeric Powder: 1/2 teaspoon
Coriander Powder: 1/2 teaspoon
Cumin and pepper(crushed): 1/2 teaspoon
Lime Juice: 1 teaspoon
Ginger Paste: 1/2 teaspoon
Garlic Paste: 1/2 teaspoon
Olive Oil:5-6 teaspoon and salt to taste
Method:

Slit the Pomfret diagonally on both the sides

Mix Chilly Powder, Turmeric Powder, Coriander Powder,Cumin and pepper,Lime Juice, Ginger Paste,Garlic Paste,salt and 1 teaspoon olive oil

Apply the mixture on the fishCover the fish and refrigerate it for 4-8 hours.
Then shallow fry it in a tawa with the remaining oil.

Notes:
You can also deep fry  or grill the fish
Also can add a teaspoon of onion paste
Olive Oil can be replaced with any type of cooking oil

Moong Dal Dosa

Thanks Sharmi for the recipie!!!

Moong Dal Dosa..Sharmi, my colleague says this dosa is rich in protein..and an ideal breakfast..

Ingredients:

Moong Dal : 1/4 cup

Rice: 3/4 cup

Salt:  to taste

Method:

Soak the moong dal and rice overnight

Grind the moon dal and rice to a normal dosa batter consistency..

Now the batter is ready..and make dosas out of it..

Simple..isn’t it?

This i learnt from my mom-in-law.. My father-in-law wanted to have this on his birthday.. Later I tried at my home and came out well..

Here goes the recipie…

Ingredients:

Wheat flour : 1/2 cup

Sugar : 1/2 cup

Ghee : 2-3 tsp

Cardamon powder: 2 tsp

Dry fruits and nuts: as needed

Water: 1 1/2 cups

Method:

  • Heat Ghee in a kadai
  • Roast the wheat flour till the colour turns to pink
  • add elaichi powder
  • add water in the roasted flour. mix it well.. make sure no pulps form..if any break it asap
  • add sugar..
  • Stir it well till it thickens..
  • Add the dry fruits and nuts..

chicken Fry

Mommy Style!! Learnt from mom..

Ingredients:

Chicken: 1/2 kg ( size of the pieces is of ur choice)

Onions: 2 ( chopped fine)

tomatoes: 4 (chopped)

Red Chilli flakes: 1 tspn

Ginger-Garlic paste: 2tsp

Curry leaves: 4-5 leaves

pepper corns: 2 tspn

chilli powder:3 tspn

pepper powder: 2 tspn

Turmeric Powder: 1 tspn

Coriander Powder:1 tspn

Oil: 2 tsp

Method:

  • In a frying pan, add oil and once after the oil is heated, add the pepper corns, curry leaves, chilli flakes and ginger garlic paste and saute it for few seconds
  • Add onions and fry till the onions turn brown
  • Add tomatoes, chilli powder, Turmeric Powder and Coriander Powder and fry for few minutes till the oil leaves the masala
  • Add chicken pieces and saute it for 2 minutes
  • Add 2 cups of water and let the chicken cook
  • Once after the water is drained add pepper powder and keep stirring for few minutes.

Saibhaji Pulao

My husband is a sindhi and he loves Sindhi cuisine and one of his favorite is SaiBhaji Pulao.. a traditional Sindhi cuisine.. I learnt it from my mom-in-law

For SaiBhaji:

Ingredients:

Palak (Spinach): 2bunches (washed, Roots Cut and chopped fine)

Channa Dal: 2 cups

Potato: 1(Diced)

Brinjal (Eggplant): 1(Stem Removed and Diced)

French Beans: 4-5 (Chopped)

Carrot: 2(Chopped)

Bottle Gourd: ½ (Diced)

(U can add any vegetables of ur choice)

Onion: 1(Diced)

Tomato: 1(Diced)

Green Chillies: 1 or 2 (chopped)

Coriander Powder: 1tsp

Turmeric Powder: 1 tsp

Cumin Seeds: 1tsp

Mustard Seeds: 1tsp

Curry Leaves: 4-5 leaves

Asafetida: a pinch

Garlic: 3-4 cloves

Oil: 1tsp Salt to taste

Method:

  • Wash and Soak Channa Dal for 5-10 minutes
  • In a pressure cooker, add Soaked Channa Dal, Spinach, onion, tomato, green chillies and the rest of vegetables
  • Add Water 4-5 cups of water
  • Add Coriander and Turmeric Powder in the cooker and pressure cook it till 4-5 whistles
  • After removed from the stove, add salt and mash the bhaji well
  • For Tadka: Add oil in a pan, Splutter Cumin seeds, Mustard seeds, Curry Leaves, asafetida and Garlic and add that in the bhaji

For Pulao:

Ingredients:

Cumin Seeds: 1 tsp

Basmati Rice: 2 cups

Green Peas: 250 gms

Ghee/Oil: 1tsp

Salt to taste

Method:

  • Wash and Soak Basmati Rice for 5 -10 minutes
  • In a pressure cooker, add Ghee/Oil and splutter Cumin seeds and add green peas
  • Add the soaked rice and saute in the cooker for 2-3 minutes
  • Add 4 cups of water and salt and pressure cook it till 3-4 whistles

Mix the Pulao with the Sai Bhaji..Its nutritious and yummy aswell..

Mushroom fry

there is no story behind it.. Just one of my experiments…

Ingredients:

Mushroom : 250gms

Onion(chopped):1/2cup

Tomatoes(chopped):1cup

Green Chillies:2 nos (chop in to small pieces)

Garlic ( chopped) : 2tsp

turmeric powder: 1tsp

chilly powder:1/2 tsp

garam masala:1/2tsp

oil: as needed

salt : as needed

Method

  • In a frying pan, add 3-4 tsp of oil and shallow fry the mushroom
  • Keep that aside
  • In a frying pan, add 2 tsp of oil and add onion, garlic and green chillies and saute it till the color of onion changes
  • Add chopped tomatoes, turmeric powder, chilly powder, garam masalaand fry well.. till the oil leaves the tomato – onion mixture
  • then add the shallow fried mushroom and saute for 3-4 mins.

Soya Fry

Soya Chunks..High source of protein for Vegetarians…and this one was my experiment few months ago!!! and I liked it and quite simple to make it

Ingredients:

Soya Chunk : 8 – 10 pieces

Onions(Chopped): 1/2 cup

Red Chilli Powder: 1/2 tsp

Garam Masala: 1/2 tsp

Turmeric Powder: 1/2tsp

mustard seeds: a pinch

salt: as needed

curry leaves: as needed

oil :2tsp

Method:

  • Soak soya chunk in hot water for 2 -3 mins, till the chunks become little bigger
  • Squeeze the water from the chunks and mash it up with hands to smaller chunks
  • in a pan, add  oil and saute mustard seeds and curry leaves
  • add onion in the pan and saute it for a minute.
  • add turmeric powder, red chilly powder, garam masala and salt
  • add the smaller chunks and saute it..till the color of soya turns to darker brown

can add coriander for garnishing….
